Scotch is very trending in the Netherlands and the Penicillin Cocktail has been a personal favourite for a while now. The smokiness of the whisky works perfectly with the spicy notes of the ginger and the mild sweetness of honey. This Royal version gets some freshness of the champagne and makes it more palatable for the not so experienced whisky drinker.
45 ml smokey Scotch whisky
20 ml homemade honey & ginger syrup*
20 ml fresh lemon juice
20 ml champagne (or prosecco/cava)
2 dashes Angostura bitters
1 slice of fresh ginger
1 orange zest
Add all the ingredients in a cocktail shaker, except for the champagne, fresh ginger and orange zest.
Shake vigorously with cubed ice and fine strain into a pre-chilled flute glass.
Add the champagne and give it a quick stir.
Garnish the cocktail with a slice of fresh ginger and an orange zest. Cheers!
